=============== Cheese Omelette =============== * 2 eggs * 2 tblspoon Milk * 2 five by five inch slices of cheese * Salt and pepper * 1.5 tblspoons olive oil Toss olive oil on sauce pan heated on medium-high. This will need to get hot before we can cook our omelette. Break eggs in mixing bowl. Add milk. Toss in some salt and pepper. Beat until homogenous whitish-yellow mixture. Pour egg mixture into pan. Count 60 seconds. Use a spatula to push the omelette towards the center of the pan. Tilt the pan to get the uncooked (liquid) to the outsides of the omelette. Toss on cheese. Wait another minute or two for it to finish cooking. Slide right out of pan onto plate. Halfway through sliding, lift the pan so that the remaining half falls on top of whats already on the plate, sealing in the cheese in Omeletty deliciousness. Optional. Blot the omelette with a paper kitchen towel to remove some of the excess olive oil. Makes it feel less greasy. Eat. Feeds one Niek. Notes: Pretty much anything can be tossed in with the cheese. Strawberry jam worked surprisingly well; tasted kinda like a Crepe. Serve with two slices of toast and don't fully overlap the omelette during flip to make Niek's "happy face Omelette".
