This is a translation of a Dutch recipe I found online. I haven't actually gotten around to attempting to make it yet. ============= Apricot Vlaai ============= * 500 grams apricots * 1 tblsp lemonjuice * 4 tblsp apricot jam * 250 grams butter * 250 grams soft white sugar * 2 eggs (medium size) * 325 grams flour * 2 teasp cinammon (mum suggests 1 teasp) * salt Wash the apricots and cut them in half. Toss out the pit, them cut the fruit into pieces. Mix the apricots, the lemonjuice, and the jam together in a bowl. Lubricate a 10" piepan with butter. In a bowl, mix 100 grams butter with 100 grams sugar an a dash of salt. It will take about 5 minutes till you have a soft, smooth and cream-colored mass. Mix in the eggs one at a time. Lightly mix in 100 grams flour (just mix in, but dont homogenous flour). Put the dough in the piepan and spread it out over the entire bottom. Spread the apricot mixture on top. Put 225g flour, 150g sugar, and the cinammon in the bowl; cut and toss in 150g cold butter in little chunks (do not touch butter with hands, want it hard). Rub this dough with the fingers till its crumbly. Spread crumbles over the apricot filling. Bake the vlaai in a preheated oven at 350F for about 45 minutes. Set cook alarm on 30 minutes (should have started to brown), then check every few minutes for yummy completeness.
